SWEET SOUR CORAL TROUT VIETNAMESE STYLE

CHA NGOT CHA – SWEET SOUR  CORAL TROUT VIETNAME STYLE

INGREDIENTS
BAHAN-BAHAN
1 Medium Size  Coral Trout
1 Ekor Kerapu Karang saiz sederhana
2 Big Onion
2 Biji Bawang Besar
2 Fresh Red Chili
2 Cili Merah Segar
4 Red Shallots
4 Ulas Bawang Kecil Merah
4 Cloves Garlic
4 Labu Bawang Putih
4 Tbsp. Cooking Oil
1” Belacan
1” Prawn Paste
4 Sudu Besar Minyak Masak
1 Tbsp. Brown Sugar
1 Sudu Besar Gula Merah
2 Tbsp. Tomato Ketchup
2 Sudu Besar Sos Tomato
1 Tsp. Turmeric Powder
1 sudu kecil serbuk kunyit
2 Calamansi
2 Biji Limau Kasturi
2” Ginger
2” Halia
Salt To Taste
Garam secukup rasa

Preparation of Ingredients
Penyediaan Bahan2
Clean up the trout; rub with salt and turmeric powder.
Bersihkan Ikan Kerapu, sapukan serbuk kunyit dan garam.
1 Big onion to cut into small dice.
Potong dadu 1 biji bawang besar
Slice Red chilies into Julienne
Potong halus memanjang cili merah.
Grind fine; Shallots/Ginger/Garlic/Prawn paste together with the brown sugar.
Kisar halus,halia,bawang merah, bawang putih, belacan dan gula merah.
1 Big onion to slice thinly
Hiris nipis 1 biji bawang besar.

How To Cook?
Cara Memasak
Using a separate cooking oil- deep fry the fish until crispy.
Mengunakan minyak masak yang lain goreng garing ikan kerapu.
Proceed to prepare the sauce.
Membuat sos;
In a preheated pan, add in cooking oil, add in all the grinded ingredients, tomato sauce and mix well. About 4 minutes later add in Tomato sauce, dice big onion and julienne cut red  chilies.
Didalam periuk yang sedia panas masukan minyak masak dan seterus nya masukan  Sos Tomato, bawang besar hiris dadu dan chili merah. Kacau rata sehingga sebati masukan perahan air limau kasturi.
Add in salt and squeeze in the Calamansi juice. The sauce to dress up the fried trout.
Tambah garam secukup rasa, Sesudah itu sos bolehlah dicurahkan keatas gorengan kerapu.
